"Although not completely unexpected, the new restaurant located in the Palace of Aiete, is an extremely gratifying surprise. Knowing that Sergio Humada’s father is Juan Mari – one of those cooks who was ahead of his times and was unjustly unappreciated in the city, yet has now returned with his illustrated bar called Hidalgo 56, in the neighbourhood of Gros – and that although he’s only 21 years old can already be found amongst the great ones, it all predicted a high level cuisine. And that’s exactly how it is: ingenious, bold, combinations full of harmony and fabulous techniques.
